Earlier today, my nephew and I took some baking lessons from my mom. She taught us how to bake her famous banana cake. We made two batches, one batch prepared by me, the second one by my nephew. We also threw in some impromptu carrot muffins. The recipe for the banana cake is a secret so I can only share  the photo.

Banana Cake

Looks yummy, don’t they? :D I like it with a little butter spread. Note: this is the only banana cake I eat. :)

The carrot muffins recipe I can share. Well, it’s actually carrot cake but we made muffins instead for the kids. It is Betty Crocker’s recipe and it’s supposed to have nuts and cream cheese frosting. We omitted the nuts because of the kids and we didn’t have cream cheese at the time so no frosting too, like what I said, it was impromptu. But it was still good! It’s so moist and not too sweet. Carrot Muffins

Carrot Cake

1 1/2 cups sugar
1 cup vegetable oil
3 large eggs
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
3 cups shredded carrots (5 medium)
1 cup coarsely chopped nuts

Heat oven to 350°. Grease bottom and sides of rectangular pan, 13 x 9 x 2 inches, or 2 round pans, 8 x 1 1/2 or 9 x 1 1/2 inches, with shortening; lightly flour.

Beat sugar, oil and eggs in large bowl with electric mixer on low speed about 30 seconds or until blended. Add remaining ingredients except carrots and nuts; beat on low speed for 1 minute. Stir in carrots and nuts. Pour into pan(s).

Bake rectangle 40 to 45 minutes, rounds 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool rectangle in pan on wire rack. Cool rounds 10 minutes; remove rom pans to wire rack. Cool completely, about 1 hour.

Cream Cheese Frosting

8 ounces cream cheese, softened
1/4 cup butter or stick margarine
2 to 3 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar

Beat cream cheese, butter, milk and vanilla in medium bowl with electric mixer on low speed until smooth.

Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable. Store frosted cake or any remaining frosting covered in refrigerator.

If you might have noticed, I moved some photography-related posts from my other blog to here. And I changed the look of this blog, too. Well, I can’t keep up with my other blogs so I just let one expire and decided to just move it here. I think it is perfect anyway since food, travel and photography go together, right? Anyway, here are some updates…

I don’t travel much these because I’ve been sickly this year. Also, I really can’t afford to go places since I’m still paying some bills and want to some stuff first. But, I’m really hoping that next year is the year. Not really bonggang travel, just around the country maybe. But thinking about itnow makes me ralize I still need more stuff to add to my “to buy” list. Hmmm. Perhaps I should give it more thought.

With regards to cooking,  I can now start baking! Yay! Our oven finally got repaired! In fact, today my mom already baked her famous banana cake. They’re actually loaves but we’ve been calling them cakes as long as I can remember. Just imagine this: I don’t eat any other banana cake except that. :D Anyway, my nephew and I are planning already what to cook and bake the next few weeks. So, I’ll be busy posting photos and recipes soon, I hope. :)

And now about photography. I’m planning to buy the Fisheye No. 2 Chrome Edition and the Lomography Ringflash next. I’ll have it shipped to my aunt in the US though (for cheaper shipping cost) so I won’t have it until February next year. But it’s okay, I can wait. Then after that, I’m thinking of buying a digital point-and-shoot camera first while I’m saving up for a DSLR. I know, I know… digital? Well, I love lomo but I have to admit that it’s also practical to have a digital one. Take this for example, I took 4 films to the lab the other day for developing and scanning. Guess what… one set came up blank (my nephew’s),  the other three were really disappointing and two of them were slide films. Boo-hoo! Well, that is how it is.

So there you go… and I still haven’t posted about my Lobo trip. I’ll try to remember the details but no photos. :(

I’ve mentioned a couple of times already that my aunt and uncle will be arriving on the 15th and I kinda promised my aunt I’ll be going to Lobo, Batangas with them. I still want to go and I have no problem with my tasks anymore because my cousin told me there’s an internet cafe in town already.

Now, the dilemna… we still don’t have a househelp… and my sister will start with her new job on the 17th. My BIL won’t be home until first week of September so, my dad and I will have to bring the kids to school. And even if my dad volunteers to do it by himself, I still have to prepare the kids. And he really wanted me to go with my aunt! What to do? Really, good luck me!

We were supposed to go swimming this weekend. Well, the original plan was to go to Canyon Cove in Nasugbu but it didn’t push through because my nephew had an entrance exam yesterday and nobody could stay behind and wait for him. So, my cousin planned on going to Subic instead. it also didn’t push through because my other cousin had an event to attend to so they all couldn’t come. So, my cousin just decided we go to Laguna. A family friend offered we stay at their house with their pool.

So, the plan was one car will leave earlier and the other (my sister, the kids, and I) will stay behind to wait for my nephew. What happened was the first car left just an hour ahead of us. But we got stuck in traffic so we were able to reached the house in Laguna at about 3 p.m. already. When we got there, my cousin told us that they didn’t want to stay there because there were too many dogs and there were too many breakables inside the house. It’s just not kid-friendly. So, we just ate the food they prepared for us and then decided to just look for a house with a pool that’s for rent in Laguna.

If you’ve been in Pansol already, then you know that you have to be patient n looking for a place to stay. There are literally thousands of places to choose from and you have to really look around to find something something nice and cheap. After the third house that we checked, my cousin decided we just go home because it was already late and the kids wouldn’t be able to swim anymore. Anlabo! I mean, the kids could still swim the next day, right? And it was already 5 p.m. and it was really raining hard. We reached home about 9 p.m. already.

My sister and I were disappointed. It was like we just went to Laguna to eat then went back home again. It was such a hassle. Good thing my mom didn’t prepare much food or else, all her effort would have been for nothing. And the poor kids kept asking when they were going swimming. Hay buhay.
